Rosemary Roasted Cherries

This simple appetizer is not only delicious to eat but will surprise and delight your guests.

Serves 6

400 grams fresh cherries (left whole with pips and stalks)
1 large fresh rosemary sprig (finely chopped)
a few sprigs of fresh thyme (de-stalked)
3 tablespoons sugar
1 tablespoon of balsamic vinegar
good pinch of salt
a big grind of black pepper

1. Pre-heat oven to 180° C.
2. Place all ingredients in a bowl and mix well so the cherries are well coated.
3. Line a tray with baking paper and place the contents of the bowl onto the surface (including the liquid). Ensure the cherries are in a single layer.
4. Place into an oven and cook for 20 to 25 minutes. They should be soft, slightly charred and very sticky.
5. Place into a bowl and serve at room temperature, ideally with fresh crusty bread and either a brie or camembert cheese.
